What's A Smørbrød?
A smørbrød is a hearty, open-faced sandwich on rugbrod rye bread. The dish, a Scandinavian tradition, is topped with savory flavors. We use fresh local and imported ingredients carefully assembled to create over 20 Nordic inspired smørbrød sandwiches.
How To Smørbrød
We encourage you to dive in head first and do what feels right. The Danes, on the other hand, are sticklers for tradition. Whether you choose to do it their way or ours, it can’t hurt to know the rules before you break them.
Use your utensils
The open-faced sandwich presents a challenge, picking up the smørbrød may result in a lap full of herring and dill. Instead, stick your middle finger up and slice that baby into small bites.
For tightrope walkers and risk-takers: dive right in with your fingers and take your chances with the balancing act that follows.
Eat more than one, and in the right order
In Scandinavia, selecting an array of smørbrød to create a true feast is the way to go. They feel that one should start with herring and wrap up your smorgasbord with cheese. The acidic herring primes the palate for meats and the cheese lends a creamy, simple finish.
…But it’s Colorado. Here, we encourage people to do what feels right, go with the flow and just enjoy it. Start with Gooey Cake, end with the herring if that’s what your heart is telling you.
